Addendum: something green

Jack reminded me that I neglected to mention the green enchiladas I made the other night with great success. The recipe was modified from Tyler Florence and involves roasting tomatillos, onions, jalapenos, and garlic, then pureeing them and adding cumin, cilantro, and lime juice. Wow, that makes a good sauce. Tyler made chicken enchiladas, but I filled ours with black beans instead, and they were yummilicious. I make black bean enchiladas fairly often using the red Hatch sauce that comes in a can, but this was so flavorful and tangy that it might be our new favorite. I made yellow rice (with turmeric, garlic, and bay leaves) and fried plantains to complete the meal. We were SO full and had leftovers for days. It was great.

Yum, that enchilada sauce sound delicious! I love green enchilada sauce, and I'm a big fan of the Hatch stuff too, but I will definitely have to try that sometime soon. It sounds like Jack is doing well in the kitchen (despite minor sifting mixups, LOL), keep up the good work! :-)
